Puliyodharai Mix and Puli Sadam (Tamarind Rice)


Puliyodharai is a famous food in South India. This food is cooked for all good occasions and during festive days. It is considered to be a good stimulant for a dead tongue. Here is the recipe for puliyodharai mix and with that we can prepare Tamarind Rice and Tamarind Idiyappam.

Time of Preparation : 25 ย minutes
Spice level : 4

Ingredients:

  • Tamarind – Big lemon size
  • Turmeric powder – 1/2 tsp
  • Sesame oil – to taste
  • Salt – to taste

To Grind:

  • Red Chillies – 4
  • Channa dal / Split Bengal gram dal – 2 tbsp
  • Coriander seeds – 2 tbsp
  • Sesame seeds – 1 tsp
  • Fenugreek Seeds – 3/4 tsp
  • Oil (for frying) – 1 tsp

For Seasoning:

  • Oil – 2 tbsp
  • Mustard seeds – 2 tsp
  • Channa dal – 2 tbsp
  • Split urad dal – 1 tbsp
  • Red Chillies – 6
  • Asafoetida (crushed or powdered) – 1 tsp
  • Peanuts – 1/4 cup
  • Curry leaves – 2 strings

Method of Preparation:

  1. Heat oil in a pan and fry all the ingredients needed for grinding.
  2. Grind it to powder and keep it aside.
  3. Soak the tamarind in hot water and take the extract from it.
  4. Add the ground powder, turmeric and salt and let it boil.
  5. Boil until it gets thick and add the sesame oil.
  6. Season it by frying all the ingredients listed.
  7. Puliyodharai mix is ready.
  8. Let it cool and store it in an airtight container and refrigerate it.

For Tamarind Rice:

Ingredients:

  • Rice – 1 cup
  • Water – 2 cups
  • Puliyodhara mix – as required

Method of Preparation:

  1. Pressure cook the rice for 3 whistles.
  2. Transfer it to a wide plate and let it cool.
  3. Add 2 tsp of sesame oil so that the rice wont stick together.
  4. Add the puliyodhara mix as required.
  5. Serve with papad or potato fry.

For Tamarind Idiyappam:

  • I make tamarind idiyappam in a similar way of tamarind rice.
  • Make Idiyappam and let it cool and add puliyodharai mix.
  • Puli Idiyappam is ready.
