Grilled Veggie Bread
Yesterday I was wondering what to cook for dinner. I had lots of bread sitting in my pantry. So I was browsing for a sandwich recipe. I came through a lot of recipe and got confused which one to make. Finally I came up with this dish called ‘Grilled Veggie Bread’. My husband and I liked it so much. It is healthy and I would definitely make it again. It was even tasty without cheese.
Ingredients:
- Bread slices – 8
- Black Beans – 1 can
- Tomatoes – 2
- Chopped onion – 1 cup
- Chopped Jalapenos – 1/4 cup
- Grated Mozzarella or parmesan cheese – 1/4 cup
- Salt and Pepper
Method of Preparation:
- Preheat oven to 350°F.
- Keep the bread slices on a baking tray and toast it in the preheated oven till it becomes golden brown.
- Toast the other side of the bread the same way.
- This may take 10 to 15 minutes
- In between, chop the onions, tomatoes and jalapenos. I used the jarred jalapenos.
- Drain the black beans and keep it aside. You can replace the black beans with your favourite beans.
- Once the bread is toasted, remove it from the oven and sprinkle some grated cheese.
- On top of it spread the beans followed by onions, tomatoes and jalapenos.
- Sprinkle some grated cheese over the vegetables.
- Repeat the same procedure with other bread slices.
- Keep it in oven till the cheese melts. This may take 5 to 10 minutes.
- Keep an eye on it after five minutes.
- Remove from oven and sprinkle some salt and pepper.
- If you do not have an oven, you can make it as a sandwich.
- Instead of toasting the bread in the beginning, make a sandwich (stuff the veggies and cheese between two slices of bread) and toast it in the sandwich maker or a griddle.
🙂 Serve hot with ketchup/hot sauce.

hi nithu….this recipie seems good. I would like to suggest u some similar version of it. Its very easy and tasty too….Its one of my favourites.I hope u too will like it.It goes this way:
mix 4 spoons of butter with 2 spoons of semolina.mix this mixture well.now in this add salt ,green chillies,pepper,and vegetables of ur intrest …generally i grate carrot,capsicum,cabbage .if u grate the vegetables its better.now mix this mixture well and apply to each bread slices (one side).now take a pan ,place the bread slices ,first plane side then after little roast turn the other side and let the mixture cook…when it is cooked color will be changed its ready to eat …with tomato sauce it tastes yummy…no need to use any oil r butter again to cook .Its very easy to make just take abt 15 mins.hope u liked it.try this and let me know.byeeeeee
