Set Uthappam / Ivory Lentil Pancakes


Uthappam or Ooththappam or Uthappa is a dosa-like dish made with Dosa batter. Unlike dosa, which is crisp and crepe-like, Uthappam is a thick pancake. When I think of the name “Saravana Bhavan” , 7 Set Uthappam comes to my mind. I have tried some 5 different types of Uthappam and here is the recipe.

Time of Preparation : 6 to 8 minutes (for one)

Ingredients:
Plain Uthappam:

  • Dosa Batter – Required amount
  • Oil – as required

Method of Preparation:

  1. Heat the tawa or turn on the griddle at 350 F
  2. Take half a laddle of batter and pour it. Need not spread the batter.
  3. Add very little oil around it.
  4. When pores appear slightly turn to the other side.
  5. Now the top side should be of golden brown.
  6. Leave it for 3 minutes. When the other side also become slightly brown, remove it from the tawa.
  7. Serve hot with any Chutney or Sambhar.

Onion Uthappam:

Ingredients:

  • Dosa Batter – as required
  • Oil – as required
  • Red Onions – finely chopped (as required)
  • Green Chillies (finely chopped) – according to spice level (optional)

Method Of Preparation:

  1. Heat the tawa or turn on the griddle at 350 F
  2. Take half a laddle of batter and pour it. Need not spread the batter.
  3. Now sprinkle the chopped onions and green chillies and add some oil.
  4. Now turn the other side until it is done.

Coriander Uthappam:

Ingredients:

Method of Preparation:

  1. For Coriander Uthappam I like to mix the coriander with the batter.
  2. For half a laddle of batter mix atleast 1 tbsp of coriander.
  3. The more the coriander fives more the flavor.
  4. Heat the tawa or turn on the griddle at 350 F
  5. Take half a laddle of batter and pour it. Need not spread the batter.
  6. Sprinkle the idly podi and pour very little oil.
  7. Now turn it to the other side until it is done.

Tomato Uthappam:

Ingredients:

  • Dosa Batter – as required
  • Oil – as required
  • Tomatoes – finely chopped

Method of Preparation:

  1. Heat the tawa or turn on the griddle at 350 F
  2. Take half a laddle of batter and pour it. Need not spread the batter.
  3. Sprinkle the chopped tomatoes and add the oil.
  4. Turn it for 3 to 4 minutes until it is done.

Vegetable Uthappam:

Ingredients:

  • Dosa Batter – as required
  • Oil – as required
  • Carrot – 1 (grated)
  • Capsicum – 3 tbsp (finely chopped)
  • Green Chillies – 2 (finely chopped)
  • Onions – 2 tbsp (finely chopped)
  • Salt – to taste

Method of Preparation:

  1. Heat oil in a pan and add the chopped onions.
  2. Add the salt and fry till they become translucent.
  3. Add the green chillies and chopped capsicum.
  4. Fry for 3 minutes and add the grated carrot.
  5. Fry for another 3 minutes and turn off the heat.
  6. Now heat the tawa or turn on the griddle at 350 F
  7. Take half a laddle of batter and pour it. Need not spread the batter.
  8. Now spead the cooked veggie and add some oil.
  9. Turn it to the other side after 5 minutes.
  10. Remove it from the heat after it is done.
