Set Uthappam / Ivory Lentil Pancakes
Uthappam or Ooththappam or Uthappa is a dosa-like dish made with Dosa batter. Unlike dosa, which is crisp and crepe-like, Uthappam is a thick pancake. When I think of the name “Saravana Bhavan” , 7 Set Uthappam comes to my mind. I have tried some 5 different types of Uthappam and here is the recipe.
Time of Preparation : 6 to 8 minutes (for one)
- Dosa Batter – Required amount
- Oil – as required
Method of Preparation:
- Heat the tawa or turn on the griddle at 350 F
- Take half a laddle of batter and pour it. Need not spread the batter.
- Add very little oil around it.
- When pores appear slightly turn to the other side.
- Now the top side should be of golden brown.
- Leave it for 3 minutes. When the other side also become slightly brown, remove it from the tawa.
- Serve hot with any Chutney or Sambhar.
- Dosa Batter – as required
- Oil – as required
- Red Onions – finely chopped (as required)
- Green Chillies (finely chopped) – according to spice level (optional)

- Now sprinkle the chopped onions and green chillies and add some oil.
- Now turn the other side until it is done.
Coriander Uthappam:
Ingredients:
- Dosa Batter – as required
- Oil – as required
- Coriander – Finely chopped (as required)
- Spicy Chilli powder / Idly podi – according to taste
Method of Preparation:
- For Coriander Uthappam I like to mix the coriander with the batter.
- For half a laddle of batter mix atleast 1 tbsp of coriander.
- The more the coriander fives more the flavor.
- Heat the tawa or turn on the griddle at 350 F
- Take half a laddle of batter and pour it. Need not spread the batter.
- Sprinkle the idly podi and pour very little oil.
- Now turn it to the other side until it is done.
- Dosa Batter – as required
- Oil – as required
- Tomatoes – finely chopped
Method of Preparation:
- Heat the tawa or turn on the griddle at 350 F
- Take half a laddle of batter and pour it. Need not spread the batter.
- Sprinkle the chopped tomatoes and add the oil.
- Turn it for 3 to 4 minutes until it is done.
Vegetable Uthappam:
Ingredients:
- Dosa Batter – as required
- Oil – as required
- Carrot – 1 (grated)
- Capsicum – 3 tbsp (finely chopped)
- Green Chillies – 2 (finely chopped)
- Onions – 2 tbsp (finely chopped)
- Salt – to taste
Method of Preparation:
- Heat oil in a pan and add the chopped onions.
- Add the salt and fry till they become translucent.
- Add the green chillies and chopped capsicum.
- Fry for 3 minutes and add the grated carrot.
- Fry for another 3 minutes and turn off the heat.
- Now heat the tawa or turn on the griddle at 350 F
- Take half a laddle of batter and pour it. Need not spread the batter.
- Now spead the cooked veggie and add some oil.
- Turn it to the other side after 5 minutes.
- Remove it from the heat after it is done.
