Godhuma Rava Briyani/Cracked Wheat Briyani

My mother used to make lot of dishes with cracked wheat. I never got a chance to make anything with cracked wheat myself. Cracked wheat is healthy and you can substitute it instead of rice. If you are in a good diet I would recommend this to eat with sambar, rasam or anything. It is good for health and is low in calories.
One of my good friends, Swathika from work, gave me this idea about making briyani in cracked wheat. She had actually made briyani in Rava (Sooji). So I decided to try making Briyani in cracked wheat.

Ingredients:

  • Cracked Wheat : 2 cups
  • Onion: 1(medium)
  • Ginger & Garlic Paste: 2 tbsp
  • Tomatoes: 1
  • Curry leaves: 5-6
  • Mint leaves: 1/4 cup
  • Coriander leaves: 1/4 cup
  • Turmeric powder: 1/2 tsp
  • Oil: 3 tbsp
  • Bay leaves: 2
  • Cloves: 3
  • Green chilies : 4-5 (according to your spice level)
  • Garam Masala: 2tsp
  • Briyani Masala: 1 tbsp(optional)
  • Salt: required to taste

Method of Preparation:

  1. Fry the cracked wheat in a pan for about 3-4 minutes(just to make them warm). Remove from heat and keep it aside.
  2. Heat oil in a pressure cooker add bay leaves, cloves fry them for  a minute.
  3. Now  add onions fry them till it becomes translucent.  After that add curry leaves and green chilies.
  4. Fry them for  about a minute and add ginger garlic paste. Cook them till raw smell goes off and add tomatoes  and salt.
  5. Add turmeric powder, garam masala and briyani masala mix it all together cook them for 2 minutes.
  6. After that add mint leaves, coriander leaves and 4 cups of water and cracked wheat.
  7. Close the lid and pressure cook for 3 whistle.
  8. After the pressure goes off  open pressure cooker and serve it hot with raitha.

  4. hi shriya.. after started working i had no time to make paka south indian meal.so tried one dish with balanced nutrients.one such is broken rava. once i made broken rava minced mutton pulaov.came out very well.one more suggetion, even u can add finely chopped palak along with the veggies.
