Stuffed Kuzhi Paniyaram / Stuffed Rice Doughnut
Usually I will make Kuzhipaniyaram in a simple way. I got this recipe from my friend Sowmiya and I tried this recently. This simple twist makes the Kuzhi Paniyaram more tasty. Since it has potato stuffing, it will be very good with coconut chutney.

Ingredients:
- Idly Batter – As required
- Oil – 1/4 cup
- Green chillies – 1 (finely chopped)
- Onions – 1/4 cup (finely chopped)
- Cumin seeds – 1/2 tsp
- Potatoes – 2 (boiled and peeled)
- Red chilli powder – 1/2 tsp
- Cumin powder – 1/2 tsp
- Ginger – 1/2 tsp (grated)
- Salt – to taste
- Coriander leaves – 2 tsp (finely chopped)
Method of Preparation:
- Heat 1tsp of oil in a pan and add the cumin seeds.
- When they splutter, add the green chillies followed by the chopped onions and grated ginger.
- Add little salt and fry till the onions become translucent.
- Crush the boiled potatoes and add them.
- Now add the red chilli powder, cumin powder and salt if needed.
- Add 2 more tsp of oil if needed.
- Mix it well and cover it with a lid for 5 minutes.
- Fry till the raw smell goes and finally add the coriander leaves.
- The stuffing is ready.
- Now heat the kuzhi paniyaram pan in medium heat and add very little oil in each hole.
- Add the Idly Batter till the 1/4th of the hole.
- Now keep the potato stuffing on the top of it.
- Now add the Idly Batter on the top (it should just slightly cover).
- Repeat this for all the holes and cover it with a lid for 3 minutes.
- Turn the paniyaram to the other side and let it cook for another 5 minutes.
- Remove it from the pan when both the sides turn golden brown.
- Serve hot with coconut chutney.
Note:
- We can use whatever stuffing we want and we can give variation by adding any masala powder.
- Cook the paniyaram in medium flame so that it will be cooked inside.
