Quick Bean Dip

Bean dip is an easy and yummy appetizer. It is a good appetizer for a cocktail or a snack party. People will definitely like it. I bought this Magic Bullet blender recently and tried a few dips and quick dishes from the recipe book. I am very eager to share the recipes with you all. So I have started with the bean dip. Here you go…

Ingredients:

  • Black beans – 1 can
  • Chopped onion – 1/4 cup
  • Garlic cloves – 2
  • Roasted red peppers – 1/4 cup
  • Vegetable broth – 1/2 cup
  • Balsamic Vinegar – 2 tbsp
  • Cayenne pepper to taste
  • Dollop of sour cream (optional)

Method of Preparation:

Preparation of Roasted Red Peppers:

  1. Preheat oven to 350ºF.
  2. Take a whole red pepper and keep it on an aluminum foil in the oven. Rotate it once the top side gets back spots.
  3. Cook the whole pepper until they have blackened spots and blisters all over and is tender.
  4. Turn off the oven and remove the peppers and transfer it to another sheet of aluminum foil.
  5. Roll the foil so that the pepper is sealed inside for sometime. Set aside until the peppers are cool.
  6. Remove the skin, scrape out the seeds and pith and cut them to pieces.
  7. Ready made roasted peppers are also available from stores.

Preparation of Bean Dip:

  1. Drain the water completely off the beans.
  2. Add all the ingredients in the order they are listed and grind them to either chunky or smooth paste.
  3. If you want it to be chunky, use pulse, stop and let the ingredients settle down and repeat it again and again till you get the desired consistency.

You can serve the dip warm or cold. If you go for the warm version, transfer the dip into a wide microwave safe serving dish. Sprinkle 1/4 cup of shredded cheddar cheese on top of it and keep it in microwave till the cheese melts down and combine with the dip. This will be perfect with nachos.

If you want to avoid cheese, you can serve it cold with nachos. Both warm and cold version are simply yummy. You can substitute black beans with any of your favourite beans.

  9. This looks so good. I have been searching for a good bean dip. Is the bean can size 15oz or 19oz?
