Vegetable Puff

This is our 100th post. I am happy to submit this recipe and would like to dedicate it to my friend Shriya. During our college days, we used to go to one of our favorite bakery for puffs and samosa. It’s so nostalgic to think about those wonderful days… I am really happy to share this simple recipe with you all.

Ingredients:

  • Pastry sheet – 1 pack
  • Medium size potato – 1 (cooked and mashed)
  • Green chilly -1
  • Green Peas – 3 tbsp
  • Onion – 1/2 cup
  • Coriander leaves – a few
  • Ginger garlic paste – 1 tbsp
  • Cumin seeds – 1 tsp
  • Red chilly powder – 1/2 tsp
  • Garam masala – 1/4 tsp
  • Oil – 2 tsp
  • Egg white from one egg
  • Salt to taste

Method of Preparation:

Preparation of Masala:

  1. Pastry sheets are available in most of the grocery stores from the frozen section.  Thaw the pastry sheets for half an hour to an hour.
  2. Heat oil in a pan and add cumin seeds.
  3. Once they splutter add onions and saute till they become soft.
  4. Now add the ginger garlic paste, green chillies and keep tossing for a few seconds and then add red chilly powder and garam masala.
  5. Now add the mashed potato, peas and some salt.
  6. Combine them well. Sprinkle some coriander leaves and mix it.
  7. Remove from heat.

Preparation of Puff:

  1. Preheat oven at 350°F
  2. Cut the pastry sheets as shown in the picture into desired size or into 9 equal rectangles.
  3. Fill them with masala and fold it. Keep less masala to avoid them coming out of the pastry sheet while baking.
  4. Seal it with egg whites and place it in a baking sheet and bake  for 30 – 40 minutes.
  5. Keep checking every 15 minutes.
  6. Once they become golden brown remove from oven.

🙂 Serve hot with tomato sauce

Preheat oven at 350°F

  18. I tried this today, came out pretty well. One tip, is when you watch for this 15 minutes, you can quickly take it out of the oven, make sure it doesnt stick to the bottom or turn black using a flat stainless steel/non-stick spatula. I added a spoon of tomato ketchup in the end and mixed it up with the masala to give it a slight tangy taste (and some fried cashews for that crunch).

  19. you ve said “cut pastry sheets as shown in the picture”…but, where is the picture?

    thanks!

  20. Thanks all.
Hi amy, Thanks for bringing it to my attention. I think the picture has been removed for some reason. I have updated the contents. Thanks again.

  21. Hi! How many puffs can you make with this recipe? I am planning to make this for about 10 people and I’m unsure if I should double/triple ingredients. Thank you!!

    • This stuffing should be enough for 10 puffs. I used a big potato.
