Chettinad is situated in the southern part of TamilNadu in India. This place is famous for its culinary delicacies. Their food has the special blend of spices which is unique and makes it delicious.  Chettinad Egg Kuzhambu is one of the famous dish from Chettinad as you can see where the name of the dish is derived from. I heard about this dish from my friend Sridevi. It sounded interesting and unusual with the way they made it. As I am a vegetarian, I have never tasted egg curry till I made it. And I loved it. I am not a huge fan of egg yolk. So my version is just with the white of egg. You can do either way. I am so curious to share it with you. Here you go… Preparation time: 40 minutes No. of...

Idli Podi – Spicy Chilly Powder

Posted by on Jun 6, 2010 in Best of ST, Featured, Masala Powders | 18 comments

Idli podi or Idli Milagai podi is made of dry red pepper and a perfect blend of spices which is served with idli or dosa. You can make this and store it in your pantry which comes for a long duration. When you are in a hurry or if your chutney or sambar is over, this always helps. I always like to have idli podi though I have other side dishes. Idli podi with Sesame oil gives a nice aroma. When you spread this in idlis and leave it for two to three hours, it absorbs the oil and flavor of the powder and just melts in your mouth. My mouth waters when I say that. I am sharing my version of idli podi here… Preparation time: 30 minutes Spice level: 4 out of 5 Ingredients: Split chickpeas/Channa dal...

A few cooking tips for you

Posted by on May 25, 2010 in Tips | 10 comments

Sticky Okra: When we cut washed okra, it will be more sticky. To avoid this, wash your okra and leave it over night in a strainer. You can either leave it outside or refrigerate if it is too hot out there. This way you can avoid the stickiness due to washing. Ripe Bananas: Are your bananas getting ripe and you have no time to make banana bread? Then peel them and put them in a zip lock bag and freeze. You can use it later when you are free to bake. Storing Onions: Whenever I have extra cut onions I seal it in a zip lock box and refrigerate it for future use. You can also saute cut onions with a little butter and freeze it in zip lock bags and use it whenever you make soups or stews....

A few Kitchen tips for you

Posted by on May 4, 2010 in Cooking Tips, Kitchen Tips, Tips | 3 comments

How to Check the freshness of eggs? To check out if your eggs have gone bad or not, there is a simple way. Just drop the eggs in water. If it is good it will sink otherwise it will float. How to avoid bugs in your pantry? Periodic cleaning of your pantry shelves helps to prevent bugs from infesting stored food products. Drop a bay leaf in your flour canisters to get rid off bugs and free from moisture. If you find your food product infested with bugs, keep them under sun for a two to three days and sieve out the bugs. Also, exposure to cold temperatures kills them. Try to keep the food products in an air tight container and clean the containers before refilling. Is your dish too salty? If so, just add a few pieces...

Sweet Puran Kozhukkatai or Sweet Rice Dumpling  is  a popular delicacy in India which is commonly prepared during the festival of Ganesh Chaturthi (Lord Ganesh’s Birthday). It is believed that this is one of Lord Ganesh’s favorite food. Hence it comes on the list of offerings that we make during this festival. Puran means filling which can be anything such as sweetened coconut, channa dal puran, spicy puran, etc. Here I am sharing the recipe for sweetened coconut puran. Kozhukkattai (modakam or modak) is more like Japanese Mochi which is made of glutinous rice. But here we use raw rice for making the outer spongy shell. I have detailed two methods for making the outer shell. You can go with whichever is easy for you. For me the rice flour/idiappam flour method is easier. But my mom always goes with...
