How to Make Veggies Last Longer?

Posted by on Nov 9, 2008 in Kitchen Tips, Tips | Comments Off on How to Make Veggies Last Longer?

It’s always a difficult job to keep the vegetables fresh and use it properly. Sometimes we forget about the  vegetables that are sitting in our fridge for a  long time.  To avoid this and make use of the vegetables properly, here are a few tips that I follow : Green chilies : Don’t put the green chilies just like that in the fridge. To keep them fresh for a long time remove the stems and put it in a ziplock bag or in some storage box. Carrots: Cover the carrots with a damp cloth and put it in fridge. It will be fresh for three weeks. Cilantro : Cilantro has to be one of the common one to go bad before you get to use it all. To kep them fresh I store them in a salad container so...

Baklawa – The Sweetheart Middle Eastern Dessert

Posted by on Oct 16, 2008 in Best of ST, Desserts, Featured, Middle Eastern | 27 comments

Baklawa is a signature middle-eastern dessert and is a favorite favorie favorite sweet of mine. I used to pester my hubby often to get this from a middle-eastern restaurant in town. It is even our make-up dessert after our little fights. That’s how much I like it. Even though I have tried my hand at baking a little, Baklawa seemed very intimidating to make it in my kitchen. And just the other day, I was talking to an old time school friend of mine, Subash. He is now a chef and when we started talking about food, he mentioned he had a simple to make yet an authentic recipe for Baklawa from a Labanese chef. He was kind enough to share it with me and a huge THANKS to you, Subash. Ingredients: Phillo pastry : 1 pack Sugar :...

Time is passing like crazy and I apologize for my absence off late. Tomato Rice has to be one of those simplest of  variety rice dishes yet can be very fulfilling to your taste buds. It’s one of my favorite lunch box meals in my school days. This is the first year we had a little garden patch in our backyard and we got plenty of tomatoes this season. Tomato rice being like my most favorite of variety rice dishes, I made it from our own garden tomatoes. It’s actually very easy to cook too. This is my mom’s special recipe and I can’t believe I am letting the family secret out. Just kidding :-). I love sharing those secrets with you. Ingredients: Tomatoes : 2 (make it into puree) Onion : 1/2 ( Medium) Green chili : 4...

Growing up relatively close to a coastal town in India – Pondicherry, we had plenty of access to fresh seafood. One of the main items in a complete South Indian seafood meal is fish fry. It has to be one of the easiest yet can made be made in different varieties. Ingredients: Fish : 4 slices (you can use any fish, but in this recipe I have used Cat fish) Oil : 1/2 cup Onion: 1 (medium) Tomatoes : 2 Ginger : 1″ Garlic : 3 Tamarind : 1/4 cup (Extract From a lemon sized ball of tamarind) Red chili powder : 2 tbsp (according to your spice level) Salt : required to...

When I was in India Vadakari used to be in our breakfast menu atleast twice in a month. It is one of my favorite sides with idli . But I never got a chance to get the recipe and live demo from my mom. After I got married I came to know it is my hubby’s favorite too. I tried it a few times but it wasn’t even anywhere close to my moms recipe. My mother-in-law is in town and now she made this last month for us and I was like this is it! It was just my moms recipe and the same restaurant style taste that I used to crave for. And now I got the recipe and tried it last week by myself and it came out really good. It is again one of the famous...

Aapam – Rice Pancakes Recipe

Posted by on Aug 14, 2008 in Breakfast Menu, Veggie Entrees & Sides | 12 comments

Aapam is another one of those unique south Indian breakfast dishes. It will come under the same family of “Dosas” except aapam will have a thick spongy center and thin and crispy edges. It’s usually made in a special “Aapam pan/Kadai”. You might find this in the breakfast section of a south Indian restaurant menu. Aapam is my husband’s favorite breakfast of all time. He kept asking me to make this for a long time. But as with many other dishes, I thought this is hard to make. After my mother-in-law showed me once, I found out it isn’t that hard to make. You will find out why in a minute. “Wish you all a Happy Independence Day” Ingredients: Parboiled Rice : 1cup Raw rice : 1 cup Urad dal : 1/4 cup Fenugreek seeds : 2 tsp Coconut...

Tandoori Chicken is another staple item in any Indian restaurant menu and is one of the best liked items as well. Tandoori Chicken is a chicken dish that originated in the Punjab region of the Indian subcontinent. Chicken is marinated in yogurt and seasoned with tandoori masala. It has a lot of history behind it going back to the Mughal age. From Wikipedia, Tandoor cooked chicken actually dates back to the Mughal peroid. A man named Kundan Lal Gujral ran a restaurant called Moti Mahal in Peshawar before the partition of India. Trying out new recipes to keep his patrons interested, Gujral tried cooking chicken in tandoors (clay ovens) used by locals until then to cook naans (bread). Seafood Paella (Traditional Spanish Recipe) and an Award

Posted by on Jun 24, 2008 in Best of ST, Featured, Meat & Seafood Entrees, Rice dishes, Shrimp Dishes | 19 comments

Paella is a traditional Spanish dish. But it tastes almost like Indian Biryani. The speciality of paella is its used to cook in a special paella pan which is a large, shallow, flat pan. From Wikipedia, Paella is a typical Valencian rice dish from Spain. The origin of the name paella is in the Valencian for frying pan. This word in turn derives from Latin patella and is akin to French poêle, Italian padella, Old Spanish padilla and New Mexican Spanish Paella. Paella is usually garnished with vegetables and meat or seafood. The three key ingredients are rice , saffron, and olive oil. An important part of the flavor comes from the addition of saffron and the sofrito, or the combination of tomatoes, and garlic (and sometimes peppers). if you are a vegan one can  substitute vegetables instead of...
