Coffee Cake

A class of cake intended to be eaten along with coffee is “Coffee Cake”. Though it is called coffee cake, it does not necessarily contain coffee. Coffee cakes may be flavored with cinnamon or other spices, seeds, nuts and fruits. A adapted this recipe from “Joy of Baking” and it came out so perfect.

Time of Preparation : 20 to 30 minutes
Baking Time : 45 to 50 minutes

Ingredients:
For Topping:

  • Walnuts / Any dry fruits – 1 cup
  • Light Brown Sugar – 1/4 cup
  • Chocolate chips – 1/3 cup
  • All purpose flour – 1 tbsp
  • Ground Cinnamon – 1/2 tsp

For Cake:

  • Unsalted Butter – 1/2 cup (room temperature)
  • Sugar – 1 cup
  • Vanilla Extract – 1 tsp
  • Eggs – 2 (room temperature)
  • Sour Cream – 3/4 cup
  • All Purpose Flour – 1 2/3 cup
  • Baking Powder – 1 tsp
  • Baking Soda – 1/2 tsp
  • Salt – a pinch

Method of Preparation:


For Topping:

  1. I have used walnuts for the topping mixture.
  2. Preheat the oven to 350 F and toast the walnuts for 8 to 10 minutes.
  3. Crush them and mix well with all the other ingredients for the topping.
  4. Topping for the coffee cake is ready.

For Cake:

  1. In a bowl whisk the flour, baking powder, baking soda and salt and keep it aside.
  2. Sieve them or make sure that the powders are mixed well to the flour.
  3. In another bowl, beat the butter for a minute until soft.
  4. I have used hand mixer for mixing.
  5. Then add the sugar slowly and beat it for another 5 minutes until light and fluffy.
  6. Add the vanilla extract and beat well.
  7. Then add the first egg and beat well. Now add the second egg and beat until it is combined properly.
  8. Scrape the sides whenever necessary.
  9. Now add the flour mixture and the sour cream alternatively little by little (3 times of addition) and beat well.
  10. The mixture texture will be smooth and creamy.
  11. Now preheat the oven to 350 F. In a 9″ circular baking dish grase the bottom and the sides with butter.
  12. Spread half of the mixture and spread the topping next. Now spread the mixture again and the topping on the top.
  13. Bake it for around 45 to 50 minutes until a tooth pick inserted in the center comes out clean.
  14. Enjoy the cake with coffee.
