Double Chocolate-Vanilla Ice Cream Cake
Ice cream cake is my family’s all time favorite. We generally order it from outside for any special occasion. My favorite place for Ice cream Cake is Cold Stone Creamery.
I always wanted to try it at home and have been looking for a good recipe. Finally found an easy and brilliant recipe and gave it a try for my 3rd Wedding Anniversary last week. It came out just as I expected and my husband (GS) and I loved it. It just tasted like the Cassata Ice cream (but was missing a couple more layers) from “Arun Ice creams” a popular ice cream parlor chain in South India. It is so simple to make this cake if you are using ready made ice creams.
This is to make a 9″ round cake.
Ingredients:
- Semisweet chocolate – 1 cup
- Heavy cream – 3/4 cup
- Vanilla ice cream – 3 cups (1 1/2 pint)
- Chocolate ice cream – 2 cups (a pint)
- French Vanilla cake mix – 1 pack
- 9″ round baking pan
Method of Preparation:

- Use half of the French Vanilla cake mix and follow the instructions given at the back of the package and prepare the cake.
- In between, boil heavy cream and add it to the semisweet chocolate chips in a bowl.
- When chocolate starts melting mix them evenly to a smooth paste.
- Once the sponge cake is ready, transfer it to a sheet. You can slice the top portion if it is too high to be a layer of the cake.
- Line a nonstick 9″ round pan with plastic wrap allowing a few inch to hang over on the sides of the pan. This is to easily transfer the cake to a serving plate.
- Pour the melted chocolate in the pan and that serves as the bottom layer.
- Cover the chocolate layer with the round sponge cake and refrigerate it for an hour or until the chocolate is firm.
- Spread the vanilla ice cream on top of the cake evenly and freeze it till it becomes firm which takes a minimum of 3 to 5 hours.
- Thaw the chocolate ice cream for a few minutes and finally spread it on top of the vanilla ice cream and freeze it overnight.
- If you don’t want to wait for the vanilla ice cream to set, you can cover the vanilla ice cream with some cookies or wafers and place it in the freezer for half an hour and then spread the chocolate ice cream and freeze it overnight.
- To remove the cake from the pan, just lift the plastic wrap and carefully remove it from the cake.
- Your ice cream cake is ready.
