Easy Kulfi IceCream

Kulfi is a delicious frozen Indian dessert made from dairy products. It is a perfect summer treat for both kids and adults.

This recipe for making Kulfi takes only a few minutes to prepare and is perfect for party treats and quick dessert ideas. All you have to do is blend the ingredients and freeze it. You can use aluminum or plastic molds for making Kulfis. I bought mine from IKEA. If  you do not have Kulfi mold, you can either pour the contents into a big box or tray, cover it with a tight lid or aluminum foil and freeze it overnight. Scoop and serve.

Preparation time: 20 minutes

Freezing time: 6 to 8 hours

Yield: 50 small Kulfis

Ingredients:

  • Evaporated milk – one 12 oz can
  • Condensed milk – one 14 oz can
  • Heavy whipping cream – 473 ml
  • Cool whip – 12 oz
  • Blanched almonds – 3 tbsp
  • Pistachios – 3 tbsp
  • Cashew nut – 1 tbsp
  • Powdered cardamom – 1/2 tsp

Method of Preparation: 

  1. Clean the kulfi molds and keep it ready.
  2. Toast almonds and cashew nut separately until light brown. Toast pistachios separately for a couple of minutes. Let everything cool.
  3. Grind toasted almonds to a fine powder. Pulse pistachios and cashew nut together until broken into small pieces.
  4. Blend evaporated milk, condensed milk, heavy whipping cream and cool whip using a hand mixer or a blender.
  5. Mix in powdered cardamom, ground almonds and half of the pistachios.
  6. Slowly pour the mixture into each mold and freeze it for 2 hours.
  7. After 2 hours, remove the lid from each mold and sprinkle some pistachios and let it set for 6 hours or overnight.
  8. The above step is to avoid the sinking of nuts to the bottom of the kulfi. It also gives a crunchy bite to your kulfi. You can also skip this step and add all the pistachios at step 5.
  9. Remove the molds from freezer and put it in cold water for a few seconds before taking the kulfi out.
  10. Delicious homemade kulfi is ready.

Tip/Note:

For parties, you can use small disposable cups and toothpicks or wooden sticks for making kulfis. Pour the mixture in each cup, cover each cup with a piece of aluminum foil and insert the stick.
