Spicy Mutton Curry
Our first ever Recipe contest went great and we really appreciate everybody for participating in it. We are now back to regular programming with this excellent Mutton Gravy recipe from my mother-in-law’s Kitchen. If you like spicy gravies with chapathis or parathas, then you have come to the right spot. This spicy mouth watering mutton dish will make a perfect companion to different dishes like chapathis, parathas, briyani or even dosas. The trick to getting this right is in the pressure cooking process where the mutton becomes really tender and juicy.
Ingredients:
- Mutton:500gm
- Onion : 2
- Tomatoes : 2
- Ginger& Garlic Paste : 3 tbsp
- Oil : 5 tbsp
- Cinnamon stick : 1 inch
- Cloves : 3
- Bay leaves : 2
- Fennel seeds : 1 tbsp
- Turmeric Powder: 1tsp
- Curry leaves : 6 to 8
- Red Chili Powder : 1/2 tbsp
- Coriander powder : 1 tbsp
- Black Pepper : 2 to 3 tbsp ( according to your spice level)
- Coriander leaves : few ( for garnishing)
Method Of Preparation:
- Heat 1/2 spoon oil in a pan add onions sautee till it becomes soft and translucent .
- Add tomatoes and fry them all together for about 5 minutes .
- Remove them from heat and let it cool for few minutes.
- Grind ’em into a smooth paste. Keep it aside.
- Heat 3 tbsp of oil in a pressure cooker, add the ground paste and fry it in the oil for 2 to 3 minutes.Then add the ginger & garlic paste .
- After the raw smell off ginger and garlic goes off, add the mutton and mix it all well. Fry the mutton with the masala for 5 to 8 minutes in medium flame.
- Now add the red chili powder, turmeric powder, coriander powder , black pepper , salt and half cup of water into it.
- Stir it well so that all of the ingredients mix together and close the lid of the pressure cooker.
- Pressure cook it until the whistle goes off 4 times. After that remove from heat and keep it aside.
- Heat the remaining oil in a kadai/pan add cloves, cinnamon, bayleaves, fennel seedsand curry leaves. After the seeds sputter add the pressure cooked gravy in to it . Boil it for a few minutes or till it comes to complete boil.
- If the gravy is little watery leave it in a medium heat until it becomes a bit thick in consistency and remove from heat.
- Garnish it with coriander leaves.

Hi, this is the 1st time I am using a pressure cooker and also cooking Indian Curries. So, I NEED your help. I use a different kind of pressure cooker … the ones you find and western stores.
So, when you say ‘whistle’ I am a little confuse. Bcos it seems to have a continuance ‘whistle’.

Hey Tricia, this might sound a bit complicated, but it really isn’t. Bear with me:
Indian pressure cookers (and I’d also expect any pressure cooker to behave in the same manner) will begin to whistle as soon as the pressure builds up to the limit determined by the weight used. Once steam starts to escape, the pressure drops within the cooker instantaneously, and this causes a sudden cooling of the contents, thereby reducing the pressure in the cooker to an extent greater than that caused by the steam escaping through the raised weight alone. This forces the whistling to stop momentarily until pressure rebuilds with further heating.
So, if the above cycle happens once, that would be “one whistle”, and if that’s what is called for, then you should stop heating as soon as that has happened.
Hi I have purchased a pressure cooker to make this curry. I am still confused. The Whistling continues for a very long time and does not seem to stop (so i cannot count the number of whistles) am I doing something wrong? also it began whistling about one minute after putting the lid on. pls help… I have made the curry but I had to just guess how long it would take so I just left the lid on for 30mins, but I would like to know how to measure the timing using the whistles. Also the cooker has a pressure release knob do i need to do anything with this?

At some point the whistle (weight) will have to fall back because the pressure of the steam in not enough to hold it up.
I would suggest going to the store and getting a pressure cooker that is “made in India”. They have really mastered the art of pressure cookers. And you can find tons of pressure cooker recipes online

I came upon this blog looking for a recipe. The recipe looks great. Will definitely try it.
I saw some of your questions about ‘whistles’ vs continuous sizzle in the western made pressure cooker. I have a Fagor pressure cooker which is not an Indian make. My Indian pressure cooker gave away and I just replaced it with this western style pressure cooker. This is how I use it for goat or lamb meat (mutton).
I prepare the meat in a separate pan. When it is ready to be pressure cooked, I transfer the prepared meat into a stainless steel bowl that can easily fit in the pressure cooker. I do this to avoid food sticking to the bottom of the pressure cooker and getting burnt. Then I do the following:
Put 2 cups of water in the pressure cooker.
Place the bowl of prepared meat in it.
Close the pressure cooker lid. Make sure it is locked.
Turn the heat on and when i hear the sizzling start, I turn the heat down to medium and let it sizzle for 20 minutes or so till the sizzling seizes.
When the sizzling seizes it is an indicator the the water in the bottom of the pan has evaporated. Needs to be taken off the hot stove right away.
After the pressure has released, you can check the meat. If you feel like it is not tender enough, you can add two more cups to the bottom of the pan and repeat the process again.
Indian pressure cookers don’t have a continues sizzle,so the water does not evaporate as fast.

Guys.. In western style cookers or Hawkins Futura, keep on after whistling/hissing sound for 15-20 minutes.
For chicken 10 is enough.

That Spicy Mutton Curry made me hungryyy. I love mutton and can eat all my rotis and rice with it. But I have never added curry leaves to my recipe. Must try yours.

You might make it better in a normal pot. After frying the mutton with the ground cooked tomato/onion paste, and putting in all the spices, put the lid on and leave it for at least 1 hour on a low heat.

Hi shriya…y grind the tomatoes and onions, isnt it better to boil it till it dissolves? Just curious. and if i would to add green chilis, would it make a difference?
It came out very well.verry nice.i had to cook in the pressure cooker for about 15min.But I think pressure cooker is not necessery if you hvae enough time.Just use a thick bottomed vessel with a lid and cook in medium heat until you get the result.It will taste better.Thanks for shareing the recipe.

Have made your curry almost a dozen times…. to ease up the process… I begin with the oil+cinnamon+bayleaves… then i saute onion paste in it.. add salt…then add the ginger+garlic paste.. then add the masalas… then the tomato paste… mix in the mutton… add a little water… put on pressure for 4 whistles… and amazing mutton curry ready… no matter how many times i make it… ur blog is always open on my lappy when the curry is cooking for reference 🙂
Is it whole Black Pepper or Black pepper powder? which is used in Spicy Mutton curry.

Excellent recipe! I’m one of the ‘phoren’ Indians who never needed to cook back home and now miss home food. My wife found the dish VERY tasty.
It has been a great connection between Coriander leaves for garnishing and Curry Leaves, Having south connection now settled in East, this recipe was awesome..

I tried this recipe yesterday, and it turned out just great! We have moved out of the south asia after 5 years and this was a real treat after two months without the real ‘desi flavor’. The comments on the pressure cooker were quite helpful since mine doesn’t whistle….so the timing was quite helpful!
