Vegetable Quesadilla
Vegetable Quesadillas are made with tortillas and filled with veggies and cheese. These are one of the tastiest dishes of Mexican Cusine. They are easy to prepare at home with our choice of veggies and here is the recipe for the simple Veggie Quesadilla.

Ingredients:
- Flour Tortillas – 8
- Onions – 1/2 cup (finely chopped)
- Green Peppers – 1/2 cup (cut to small squares)
- Red Peppers – 1/2 cup (cut to small squares)
- Green chillies – 2 (finely chopped)
- Red chilli flakes – 1/4 tsp (according to spice level)
- Garlic powder – 1/2 tsp
- Zucchini – 1/2 cup (chopped)
- Corn – 1/4 cup (I have used frozen corn)
- Tomatoes – 1/2 cup (finely chopped)
- Caabage / lettuce – 1/2 cup (finely sliced)
- Oil – 2 tsp
- Salt – to taste
- Cheddar / Monterrey Jack / Mexican cheese blend – 1 cup
- Salsa / Sour Cream – as required
- Heat oil in a pan and fry the onions till they become translucent.
- Add the green chillies followed by the bell peppers and zucchini.
- Add some salt, red chilli flakes and garlic powder and fry till they become soft and add the corn.
- Fry for 2 minutes and turn of the heat.
- If we have quesadilla maker, we have to just keep on tortilla, spread the cooked veggies, then spread the chopped tomatoes and cabbage and spread the cheese.
- Keep another tortilla on top and turn on the power and it will be ready in couple of minutes.
- We have to just cut into pieces and serve with salsa or sour cream.
Alternative Method:
- Take one flour tortilla and place it in the pan.
- In medium heat spread some oil on the tortilla. Toast the tortillas for about 10 seconds each side until air pockets begin to form within the tortilla.
- Spread some cooked veggies, chopped tomatoes and cabbage and cheese over one half of the tortilla.
- Fold the tortilla covering the mixture into a semicircle. Press down on the tortilla for a few seconds, allowing the cheese to melt.
- Flip the quesadilla to toast the other side, making sure neither of the sides get too brown.
- Toast until light brown spots appear and the tortillas are lightly crisp.
- Serve with the salsa, sour cream, and guacamole.
