Vegetable pulao

Ingredients:

  • Basmati rice – 2 cups
  • Oil – 3 tbsp
  • Chopped carrot -1/2 cup
  • Chopped beans – 1/2 cup
  • Peas – 1/4 cup
  • Green chillies – 2
  • Chopped Onion – 1 cup
  • Fennel seeds – 1 tsp
  • Cloves – 3
  • Bay leaf – 1
  • Cinnamon stick – 1″
  • Ginger garlic paste – 1 tbsp
  • Ghee – 2 tsp
  • Salt to taste

Method:

  1. Wash and soak basmati rice for 15 mins
  2. Heat oil in a pan and add coarsely ground cloves, cinnamon, bay leaf followed by whole fennel seeds
  3. Once they splutter, add the chillies, onions, ginger garlic paste and saute
  4. Now add the vegetables and toss for a few minutes
  5. Now drain the water from the rice and add it to the above mixture and combine well
  6. Transfer the contents to a pressure cooker, add 3 1/2 cups of water, salt, ghee and cook.

🙂 Serve hot with any veg/non-veg curry or raitha

*** If you cook white rice in 3 whistles, then you can turn off the stove in 1 or 2 whistles for pulao ‘coz we have already soaked the rice in water for 15 minutes.
