Cauliflower Poriyal/Cauliflower Masala Curry

I am happy to join hands with my friends to write my recipes in SpicyTasty and my special thanks to them for that. Here is my first recipe, Cauliflower Masala Curry. My mom used to make this and I love this.
Preparation time: 35 minutes

Ingredients:
- Cauliflower – 1 (small size)
- Onion – 1 chopped finely
- Tomato – 1 chopped
- Cinnamon stick – 1/2″
- Cloves – 2
- Cumin seeds – 1tsp
- Ginger garlic paste – 1tbsp
- Red chilli powder – 1tsp
- Salt – to taste
- Coriander leaves – 3 or 4 strings
- Oil – 2tsp
Masala to Grind:
- Coconut – 1 1/2 tbsp
- Fennel seeds – 2tsp
- Cumin seeds – 1tsp
- Green chilli – 1
Method of Preparation:
- Separate cauliflower into small pieces.
- Immerse the cauliflower florets in hot water with some salt.
- Grind the masala to paste and mix it with the drained florets and keep it aside.
- Heat oil in a pan add cinnamon sticks, cloves, cumin seeds and chopped onions.
- Fry them till it becomes translucent and add ginger garlic paste and toss it for 2 minutes.
- Then add the chopped tomatoes followed by salt and cook them till they are smashed.
- Now add the florets mixed with ground paste and add the red chilli powder.
- Fry till they become soft and add the coriander leaves.
Cauliflower Masala Curry will be tastier than the usual way we make the cauliflower curry. I tried it and it came out real good. My husband and all my friends liked it. This curry can be taken as a side with rice or can be served with chapathi.

Madam i am a pure vegeterian and i don want to use chicken masala and vinegar please tell me a substitute
If it is a vegetarian recipe, chicken masala will be usually optional. You can leave it. There is no proper substitute for vinegar.
