Cheppankizhangu curry – Colocasia fry

Colocasia is commonly known as Taro, Cocoyam, Elephant ear, etc. Number of delicious dish can be made from this root vegetable. In Tamilnadu we make colocasia fry, we add it in moru kozhambu (kadhi), sambar, etc.  Today I am sharing colocasia fry which is one of my favorite dish. My mom makes it for me and it is the best. Here you go…

Preparation time: 30 to 35 minutes

Ingredients:

  • Colocasia –   6
  • Oil – 4 tbsp
  • Red chili powder – 1 tsp (adjust to spice level)
  • Coriander powder – 3/4 tbsp
  • Cumin powder – 1/2 tbsp
  • Turmeric powder – 1/4 tsp
  • Sambar powder – 1/2 tsp (optional)
  • Salt to taste

Method of Preparation:

  1. Pressure cook colocasia for 15 minutes or till it is half cooked. You can also cook colocasia in a microwave oven, with a little water in a covered bowl,  till it is half cooked.
  2. You should be able to peel the skin off easily.
  3. As I said peel the skin off the colocasia and cut them to your desired shape (cubes or slices).
  4. Heat oil in deep, wide pan and add the cut colocasia .
  5. Add the required salt and toss for a minute.
  6. Now add sambar powder and mix well. Leave it for a minute.
  7. Add red chili powder, coriander powder and cumin powder and saute for a couple of minutes.
  8. Add a little water. Cover and cook for 7 minutes at medium heat.
  9. Remove the lid and saute for two more minutes.
  10. Again cover and cook for 7 more minutes.
  11. Repeat the process if required. Colocasia has to be cooked as well as crisp.
  12. Serve with white rice and sambar/rasam.
