Methi Paratha
Methi leaves are rich in calcium, phosphorus and iron and its mineral and vitamin contents are also high and this is easily assimilated by our body. I like methi leaves in any form..especially I loveee Methi paratha. My cousin used to make this recipe and now I am making it whenever I buy methi leaves 🙂 I like this to have with raitha or pickle.

Ingredients:

Wheat flour-2 cups
-
Methi Leaves-1 bunch(chopped)
-
Onions-1 cup(finely chopped)
-
Ginger garlic paste-1 tbsp
-
Green chillies-2(finely chopped)
-
Coriander powder-1 tsp
-
Red chilli powder-1/2 tsp(according to spice level)
-
Garam masala-1/4 tsp
-
Salt-to taste
-
Oil-2 tsp
Method of Preparation:

Take 2 cups of flour in a round bottom vessel and add a little salt and 3/4 cup of water or more and knead it to make a smooth dough just like that for chapathi.

Make small balls and keep it aside.

Now heat oil in a pan and fry the chopped onions till they become translucent.

Then fry the greeen chillies followed by the ginger garlic paste.

Then add the methi leaves followed by red chilli powder, coriander powder, garam masala and salt.

Fry them till the methi leaves become soft and let it cool for sometime.

Now spread the dough to your palm size and keep 1 1/2 tsp of the stuffing in the center and fold it from all the sides.

Now slowly spread the methi stuffed ball, like chappathi.

Roll it in such a way that the stuffing should not come out but try to make it little transparent.

Take a flat pan and fry the paratha by spreading little oil on both the sides till it becomes golden brown.

Repeat the procedure for the remaining dough.
-
Serve hot with Pickle or raitha.

Wow, those look delicious, simply superb. I like the addition of methi masala as a ball stuffed in the roti, instead of mixed in the dough itself. I will surely try out this way.
