Spicy Okra Fry

Spicy Okra Fry is yet another simple side dish in Indian Cuisine. Okra fry can be made in so many different ways and this is one among them. Okra/vendakkai/bhindi is my favorite vegetable. When I was pregnant with Vinay  I ate okra almost every single day.

It has some very good nutritional value. When we were kids my mom used to say “If you eat okra/vendakkai your brain development will be good and you will get good marks in maths”. That’s how I started eating okra… to get good marks in maths 🙂 My math scores were a different story.

Ingredients:

  • Okra/Vendakai/Bhindi : 2 cups (sliced into small discs)
  • Onion : 1 (small)(chopped)
  • Oil : 1 tbsp
  • Mustard seeds: 1 tsp
  • Urad dal : 1 tsp
  • Curry leaves : 6-7
  • Green Chilies: 2-3
  • Whole Red Chilies : 4
  • Roasted Gram (chana) dal : 2tsp
Method Of Preparation:
  1. Dry roast the roasted chana dal and red chilies and grind them into smooth powder.
  2. Heat oil in apan add mustard seeds, ura dal after it sputters add onions.
  3. Fry them till it become translucent and add green chilies (slit lengthwise).
  4. Now add the okra/bhindi/vendakkai with some salt and curry leaves. Add a cup of water and cover it with lid.
  5. Cook til okra becomes soft and tender and it should be well cooked.
  6. Fry them till it becomes dry add the ground powder from step 1.
  7. Mix it all together and cook it medium heat for 2-3 minutes and remove from heat.
  8. Garnish it with coriander leaves.

Even my Mom used to tell Bindi enhances Maths skills n my favourite veggie is bindi. I can eat how much Bindi u give me, despite dat Maths was not my favourite subject 🙂 its just a myth… Ha… Ha…
