Spicy Poondu Kuzhambu (Spicy Garlic Curry)

This is my mom’s signature dish and a favorite for everyone in my family. She makes it almost every other weekend for us and it gets over fast.
If you are looking for a simple and spicy kuzhambu recipe, then you are at the right place. You can serve this dish with rice as well as dosa/idli. It stays good for upto a week in the refrigerator. Mix a couple of tablespoon of this kuzhambu with rice along with a tsp of sesame oil and serve it with papad.

Ingredients:
- Garlic pods – 3/4 cup
- Medium size eggplants (Indian eggplant) – 4
- Tamarind – one lemon size
- Coriander seeds – 2 tsp
- Dry red chilies – 5 to 6
- Channa dal – 1 tsp
- Toor dal – 1 tsp
- Urad dal – 3/4 tsp
- Black whole pepper – 3/4 tsp
- A few curry leaves
- Mustard seeds – 1 tsp
- Cumin seeds – 1 tsp
- Oil – 1/3 cup (preferably sesame oil)
- Salt to taste
Method of Preparation:
Soak tamarind in a cup of hot water and extract juice.
Heat a tsp of oil in a pan and add coriander seeds, dried chilies, channa dal, toor dal, urad dal, black pepper and some curry leaves. Fry until the lentils become golden brown. Remove from heat, let it cool and grind it to a fine paste with a little tamarind juice.
Heat 2 tbsp of oil in a pan, add mustard seeds and let it splutter. Add cumin seeds and curry leaves followed by garlic. Saute until garlic becomes tender.
Add chopped eggplant and salt and cook for 5 minutes. Sprinkle some water, cover and cook until eggplant is cooked and slightly mashed. Stir frequently.
Add ground paste along with the tamarind juice add let it come to a boil over medium heat. Lower the heat and add 2 tbsp of oil and cook until it becomes thick.When it becomes a thick gravy, add the remaining oil and turn off the heat. Mix well.
Remove from heat and serve hot with cooked rice. Store it for upto a week in the refrigerator.
