Vegetable Korma ( Version 2 )
This is another version of Vegetable Korma which can be served along with Roti, Ghee Rice, Pilaf or Idiyappam. The ground coconut paste gives a creamy texture and the perfect blend of spices enhances the taste. This will definitely be a treat for veggie lovers. My Mother-in-law is a wonderful cook and she share all her wonderful recipes with me. This recipe for Vegetable Korma is also hers and it is my all time favorite.
Preparation time : 4o minutes

Spice Level : 4
Ingredients:
- Cumin Seeds – 1 tsp
- Onion – 1 (large) (finely chopped)
- Green chillies – 3 (grounded)
- Ginger garlic paste – 1 tbsp
- Tomato – 1 (medium size) (finely chopped)
- Coriander powder – 1 tbsp
- Red chilli powder – 1/2 tsp (according to spice level)
- Turmeric powder – 1/4 tsp
- Carrot – 1/2
- Beans – 8
- Capsicum – 1/2
- Potato – 1/2
- Cauliflower – a few florets
- Peas – 1/4 cup (optional)
- Salt – to taste
- Oil – 2 tbsp
Masala to Grind:
- Coconut – 2 tbsp
- Fennel seeds – 1 tsp
Method of Preparation:
- Cut the vegetables to same size such that they come for 2 cups and boil them till they are half cooked.
- Heat oil in a pan add the cumin seeds followed by the onions.
- Fry them till they become translucent and add the grounded green chillies followed by the ginger garlic paste.
- Toss it for 3 minutes and now add the chopped tomatoes.
- Fry them tilll they are smashed and now add the turmeric powder, coriander powder, red chilli powder and the salt.
- Fry them for 3 minutes and now add the boiled vegetables and add some water.
- Boil it until the vegetables are completely cooked and then add the ground paste.
- Allow it to boil for 5 minutes.
- Serve hot with chappathi or Idiyappam.

we should not fry the coconut..

This was excellent, but I did make a number of modifications because it didn’t look like the photo, and I really loved the look of the dish in the photo! I did taste it before my modifications though and thought it was good. The photo showed a saucy, tomatoey dish but it was not so after following the recipe. The recipe says, simply, “add some water.” After I added enough to make it saucy, the flavors were diluted. I added half a can of tomato paste to give it a tomato sauce. Loved the coconut/fennel combo, and I doubled that to give it more flavor. I think I also threw in more of the other spices as well. And some cream b/c the photo looked creamy. Yum.

Thanks for trying out this korma. The color is because of the tomato and red chilli powder.I too love the coconut and fennel combo and I did not add cream.We should add water so that it is saucy. Two to 3 cups is sufficient.
